Coffee Cake Recipe by Bittersweet Walnut Grove

Coffee Cake is one of our family favorites in every season. It feels like eating dessert for breakfast!

Apple Coffee Cake

Apple Coffee Cake


  • 1/2 cup walnuts
  • 1 cup apple, peeled and chopped
  • 2 1/4 teaspoon active dry yeast
  • 1/3 cup brown sugar, packed
  • 2 tablespoons shortening
  • 2 3/4 cup all-purpose flour or gluten free flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 egg
  • 1 cup water
  • 1/3 cup brown sugar, packed
  • 1/3 cup all-purpose flour or gluten free flour
  • 1/3 cup butter, softened
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon


  1. PREPERATION: Preheat oven to 375ºdegrees. Grease and flour a tube pan or a 9-inch square cake pan.
  2. PREPARE TOPPING: Combine brown sugar, flour, and spices. Mix well. Combine mixture with butter using your hands until the mixture is crumbly. Set aside.
  3. DIRECTIONS: In saucepan heat water and shortening until very warm (120 - 130 F; shortening does not need to melt). In large mixing bowl combine 1 1/2 cups flour, yeast, brown sugar, salt, and cinnamon; mix well. Add warmed shortening mixture to the flour mixture. Add egg. and blend on low speed until moistened. Then beat 3 minutes at medium speed. With a spatula, mix in the remaining flour, apples, and walnut in small amounts until combined and you have a soft batter. Sprinkle prepared topping over the dough. Cover and let rise in a warm place about 30 minutes. Bake for 35 to 40 minutes until golden brown. Serve warm.
